Verjus is the juice of unripened, unfermented wine grapes. While acidic, verjus has a gentler flavor than vinegar, and a sweet-tart taste that is often used to heighten the flavor of many sauces or mustards. It is used in many French dishes as well as European and Middle Eastern cuisines.
